- 1/2 medium onion, peeled and thinly sliced
- 1 pear, cored and thinly sliced
- 2 ounces vegan Brie cheese, sliced or torn
- 3–4 sprigs thyme, leaves removed
- 6–8 tortillas
- 1 tablespoon vegan butter or coconut oil
Instructions
Balsamic Glaze
- In a small pot over medium-high heat, combine the balsamic vinegar, sugar, salt and pepper. Stir to dissolve the sugar and bring to a gentle simmer.
- Reduce heat slightly and simmer, stirring occasionally, until the glaze thickens enough to coat the back of a spoon — about 5–10 minutes. Watch carefully, as it can thicken quickly. Remove from heat once it reaches a syrupy consistency.
Quesadillas
- Heat the vegan butter or coconut oil in a skillet over medium-high heat.
