- 2 lbs. chicken breast or chicken thigh meat boneless & skinless, cut into strips
- kosher salt and black pepper
- 1 to 2 cups all-purpose flour for dredging
- 1 to 2 eggs beaten
- 1/3 cup milk
- 1/2 cup orange juice
- 1 1/2 cups panko breadcrumbs
- 1 cup shredded unsweetened coconut
- Peanut or Canola Oil for frying if frying
- Parmesan cheese freshly grated, for garnish
- Fresh parsley for garnish; optional
DIPPING SAUCE VARIATIONS:
- BBQ sauce with some shredded coconut mixed in
- Honey Dijon mustard
- Ranch dressing

Prepare the chicken: pat the strips dry and season both sides with kosher salt and black pepper. Arrange three shallow bowls in a line for dredging: bowl 1 — flour; bowl 2 — beaten eggs mixed with milk and orange juice; bowl 3 — panko breadcrumbs combined with shredded unsweetened coconut. Working one strip at a time, coat each piece in flour, then the egg mixture, and finally press into the panko-coconut mixture until fully coated. Repeat until all strips are prepared.

If frying: heat 1/2″ of peanut or canola oil in a heavy-bottomed pan over medium-high heat until shimmering. Fry the tenders in batches to avoid overcrowding, about 3 minutes per side or 6–8 minutes total, until golden brown and cooked through. Transfer to a paper towel–lined plate to drain. Garnish with freshly grated Parmesan and chopped parsley if desired, and serve with your choice of dipping sauce.
