It combines bold balsamic flavor, melty mozzarella for cheese lovers, and a bright, fresh bruschetta topping made with ripe tomatoes and fragrant basil. The result is an easy, satisfying meal that looks and tastes like something special, but comes together with minimal effort.
Ingredients You’ll Need
Chicken: Use boneless, skinless chicken thighs or chicken breasts. Both work well; thighs are slightly more forgiving and stay juicy, while breasts are lean and great if pounded to even thickness.
Garlic: Freshly minced garlic adds depth to both the marinade and the bruschetta topping.
Mozzarella: Sliced fresh mozzarella melts beautifully over the chicken. Shredded mozzarella works as an alternative.
Olive oil: Use a good extra virgin olive oil for the bruschetta to bring a fruity, peppery note.

How To Make Bruschetta Chicken
Grilling is my favorite method for this recipe, but you can also bake or cook on the stove — instructions for each are included in the recipe card below.

- Make the marinade. Whisk together olive oil, balsamic vinegar, minced garlic, Italian seasoning, salt, paprika, and black pepper in a large bowl.
- Marinate the chicken. Add the chicken and marinate for 30 minutes up to 4 hours. If using chicken breasts, place them between plastic wrap and pound to an even thickness before marinating so they cook evenly.
- Prepare the bruschetta topping. Cut each tomato in half and scoop out the seeds to reduce excess moisture. Dice the tomatoes and combine in a bowl with minced garlic, chopped basil, olive oil, and a splash of balsamic vinegar. Refrigerate until ready to serve and season with salt and cracked pepper just before serving.
- Grill the chicken. Preheat your grill or grill pan to medium-high and oil the grates. Remove the chicken from the marinade and grill 5–6 minutes per side, or until internal temperature reaches 165°F (74°C). During the final minute of cooking, top each piece with a slice of mozzarella, cover, and let the cheese melt.
- Garnish and serve. Transfer chicken to a serving plate, spoon the bruschetta over each piece, and finish with a drizzle of balsamic glaze. Optionally garnish with shredded parmesan and extra basil.

For the chicken
- 1 lb boneless skinless chicken thighs (or 4 chicken breasts)
- 2 Tbsp olive oil
- 2 Tbsp balsamic vinegar
- 2 garlic cloves, minced
- 1 tsp Italian seasoning
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp paprika
- Fresh mozzarella, sliced
- Balsamic glaze for drizzling
- Optional: shredded parmesan for garnish
For the bruschetta topping
- 3–4 large tomatoes (or 2 cups chopped tomatoes)
- 1½ tsp extra virgin olive oil
- 1½ tsp balsamic vinegar
- 2 garlic cloves, minced
- ⅓ cup fresh basil, chopped
- ¼ tsp salt and cracked black pepper to taste
Instructions (short)
- Whisk marinade ingredients, add chicken, and marinate 30 minutes–4 hours.
- Deseed and dice tomatoes; toss with garlic, basil, oil, and vinegar; chill until serving.
- Grill chicken 5–6 minutes per side until 165°F; add mozzarella in last minute to melt.
- Top with bruschetta, drizzle with balsamic glaze, and serve.
Storing & Reheating
To store: Keep leftover chicken and bruschetta in separate airtight containers in the refrigerator. The chicken will keep 3–4 days; the bruschetta is best for up to 2 days.
To reheat: Place chicken in a baking dish, cover with foil, and heat at 350°F for 10–15 minutes until warmed through. You can also reheat gently in a skillet or in short bursts in the microwave. Add the bruschetta and balsamic glaze just before serving to preserve freshness.
