My partner has always been obsessed with lobster and seafood in general. On vacations he hunts for local seafood dives, especially in the Caribbean, where the fresh flavors and unpretentious spots make the best meals. On a recent trip to Jamaica we found a tiny local place a short drive from our hotel: they had great views, cold beers, reggae in the background and plates piled with lobster and crab. I stuck to fish and scallops, and everyone left happy and full — the kind of meal that makes a trip memorable.

At home, when he’s had a tough day he calls and asks for “seafoody” — and I’ll often make my spicy garlic shrimp to cheer him up. For a recent family seafood dinner my mother-in-law asked me to handle the lobster. She’d bought frozen tails and, worried about drying them out, I reached for a gentle method: butter poaching, inspired by Thomas Keller’s technique. The result was surprisingly simple and incredibly rich: lobster cooked slowly in flavored butter, finished with garlic, saffron and a touch of lemon.

Description

This saffron butter-poached lobster is rich, silky and surprisingly easy. Gentle poaching in butter keeps the lobster tender while infusing it with garlic and saffron. Serve as a show-stopping one-pan entrée with crostini, crusty bread or a simple green salad.


Ingredients

  • 1 pound unsalted butter, room temperature and cut into pieces
  • 5 grape or cherry tomatoes, halved
  • 2 lobster tails, removed from shells and cut into large pieces (or cooked whole, see notes)
  • 4 garlic cloves, minced
  • 4–5 strands saffron
  • Zest of half a lemon
  • Fresh parsley, chopped, for garnish
  • 1 tablespoon water
  • Salt and pepper, to taste

Instructions

  1. In a saucepan over medium-low heat, bring 1 tablespoon of water to a simmer. Whisk in one piece of butter until melted, then add butter one piece at a time, whisking gently as it melts. Keep the heat low so the butter never boils — it should remain smooth and slightly shimmering.
  2. Add the minced garlic and saffron to the melted butter. Keep the pan over low heat so the saffron and garlic slowly infuse the butter without browning or boiling.
  3. Let the mixture cook gently for about 5 minutes to develop the flavors. Stir occasionally and keep the temperature steady and low.
  4. Taste the butter and season with salt, freshly ground black pepper and lemon zest to brighten the flavor.
  5. Add the lobster pieces to the butter, making sure they are covered by the buttery liquid. Turn the pieces every minute or so so they cook evenly. Continue poaching for 8–10 minutes, until the lobster is opaque and cooked through. Timing will vary with piece size.
  6. Using a slotted spoon, transfer the lobster to a serving dish. Add the halved tomatoes to the butter and stir for about 1 minute to warm them through, then spoon the tomatoes and extra butter over the lobster. Add additional melted butter to taste if desired.
  7. Garnish with chopped parsley and serve immediately with crostini or crusty bread.

Notes & Tips

Butter poaching is a delicate method: keep the heat low so the butter never reaches a rolling boil, otherwise it can separate. Cutting tails into large pieces helps the butter penetrate the meat, but you can poach tails whole if preferred. Save lobster shells — they make excellent stock for bisque or seafood sauces.

If you have leftover infused butter, chill it in plastic wrap as a log and use it to flavor seafood, vegetables or to spread on warm bread. This recipe was inspired by classic butter-poaching techniques and adapted for an easy one-pan approach.

Serving ideas: crostini or warm sliced baguette to soak up the buttery sauce, a light green salad, or simply steamed vegetables. A squeeze of fresh lemon at the table lifts the richness beautifully.
