The weather here has been unpredictable—one day warm and sunlit, the next cold and drizzly. Those fleeting springlike moments inspired me to bake something fresh and cheerful. With a lemon tree on the property and a surplus of fruit, a batch of lemon bars felt like the perfect idea.

Lately I’ve been experimenting with different crumble bars and this citrus version quickly became a favorite. The lemon filling is bright and tart, and the buttery crumble makes every bite satisfyingly textured. If you have fresh lemons on hand, these are a must-try.

The Crust and Crumble

The crust and crumble are made from basic pantry ingredients: granulated sugar for sweetness, baking powder for a little lift, salt to balance flavors, all-purpose flour for structure, cold unsalted butter to create that flaky, crumbly texture, an egg for moisture, and vanilla for depth. The dough is mixed until it resembles coarse crumbs—some pressing forms the base while the remainder is reserved as the topping.

The Lemon Filling

The filling is creamy and tangy. Sweetened condensed milk provides a luscious, slightly caramelized sweetness and silky texture, while fresh lemon juice and zest give bright citrus flavor. A couple of egg yolks help thicken and stabilize the filling during baking. Tip: zest your lemons before juicing them so you don’t lose any zest when you cut into the fruit. I used three large lemons and got about 4 tablespoons of zest and 1/2 cup of juice.

These Lemon Crumble Bars are vibrant, tart, and satisfyingly sweet—the kind of dessert that’s perfect for spring gatherings, afternoon tea, or any time you want a cheerful treat.

Summary: Bright, zippy lemon filling tucked between a buttery crumble base and crunchy crumble topping. Simple ingredients and straightforward steps make this an easy dessert to add to your repertoire.

Prep Time: 10 mins   |   Cook Time: 38–45 mins   |   Total Time: 55 mins

Course: Bars, Dessert   |   Cuisine: American

Ingredients

For the crust & crumble:

  • 1 cup granulated white sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 3 cups all-purpose flour
  • 1 cup (2 sticks) unsalted butter, cubed
  • 1 large egg, lightly beaten
  • 1 tsp vanilla extract

For the lemon filling:

  • 14 oz (1 small can) sweetened condensed milk
  • 1/2 cup freshly squeezed lemon juice (about 2–3 medium/large lemons)
  • 4 Tbsp lemon zest (from about 2–3 medium/large lemons)
  • 2 large egg yolks

Instructions

  1. Preheat the oven to 375°F (190°C). Line a 13×9-inch light metal baking pan with foil or parchment, leaving the edges to extend over the sides. Spray the liner lightly with cooking spray and set aside.
  2. Make the crumble: In a large bowl, whisk together the granulated sugar, baking powder, salt, and all-purpose flour. Add the cubed butter, beaten egg, and vanilla. Use a pastry blender, two forks, or your fingertips to cut the butter into the flour until the mixture resembles small pebbles. The dough should be crumbly; you may find it easiest to finish working it with your hands.
  3. Press about half of the crumb mixture firmly and evenly into the bottom of the prepared pan to form the crust. Reserve the remaining crumble for the topping.
  4. Make the filling: In a medium bowl, whisk together the sweetened condensed milk, lemon juice, lemon zest, and egg yolks until smooth and combined. Pour the lemon mixture evenly over the crust and spread it into an even layer.
  5. Sprinkle the remaining crumble mixture evenly over the lemon filling.
  6. Bake for 38–45 minutes, or until the topping is lightly golden and the center appears set. Remove from the oven and cool completely at room temperature.
  7. After cooling, refrigerate the bars for at least one to two hours to set fully before slicing into squares. Store finished bars in the refrigerator or at room temperature; refrigeration will firm the filling more.

Notes & Tips

  • Zest the lemons before juicing to make the process easier and to ensure you get the maximum amount of zest.
  • Using cold cubed butter and working it into the flour until pebbly leads to the best crumble texture for both crust and topping.
  • These bars keep well in the fridge for several days; bring to room temperature briefly before serving if you prefer a softer texture.
  • Serve chilled or at room temperature. A dusting of powdered sugar or a few extra lemon zest shavings makes for a pretty finish.
