Ingredients

  • 70 grams (about 5 tbsp) unsalted butter, melted and somewhat cooled
  • 125 grams (1/2 cup + 1 tbsp) sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • Orange zest (optional)
  • 125 grams (1 1/4 cups) rolled oats
  • 2 tsp all-purpose flour
  • 1 tsp baking powder
  • Pinch of salt
  • Dark chocolate, melted, for drizzling or dipping

Instructions

  1. Preheat the oven to 365°F (185°C). Line two or three baking sheets with parchment paper.
  2. Combine the melted butter and sugar in a bowl. Allow the mixture to cool until it is warm but not hot—cool enough to add the egg without cooking it. Whisk in the egg, then add vanilla extract and orange zest if using.
  3. In a separate bowl, whisk together the oats, flour, baking powder, and salt until evenly distributed.
  4. Stir the dry ingredients into the wet mixture until no dry spots remain and the batter is uniform.
  5. Use two small teaspoons to drop small mounds of batter onto the prepared baking sheets. Leave plenty of space between each mound because the cookies will spread and become very thin in the oven.
  6. Bake for 8–10 minutes, or until the edges are a deep golden brown. Allow the cookies to cool and harden on the baking sheet for 5–10 minutes before transferring them to a wire rack—this step is important to achieve crispy cookies.
  7. Melt the dark chocolate and drizzle it over the cooled cookies, or dip the cookies halfway into the chocolate. Chill briefly to set the chocolate if desired, then serve.
