Ingredients

  • 1 tbsp olive oil
  • 1 yellow onion, finely chopped
  • 5 cloves garlic, minced
  • 1 lb ground beef
  • 1/2 tsp salt
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 jalapeño, finely diced
  • 1 tsp dried oregano
  • 2 tbsp cumin
  • 2 tsp paprika
  • 1 tsp chili powder
  • 1 tsp coriander
  • 2 tbsp tomato paste
  • 2 cups halved cherry tomatoes
  • 3 cups beef stock

Optional toppings

  • Salsa
  • Sliced avocado
  • Chopped cilantro
  • Grated cheddar (if not dairy-free)

Instructions

  1. Heat the olive oil in a large pot over medium-high heat. Add the chopped onion and minced garlic and cook about 3 minutes, until the onion begins to soften.
  2. Add the ground beef to the pot, season with salt, and use a wooden spoon to break the meat into small crumbles. Cook about 5 minutes until most of the beef is no longer pink.
  3. Add the diced jalapeño and the red and green bell peppers. Stir and cook about 5 more minutes, until the peppers begin to soften.
  4. Stir in the oregano, cumin, paprika, chili powder, coriander and tomato paste. Once the spices are evenly combined, add the halved cherry tomatoes and beef stock. Reduce heat to medium and let the soup simmer for 15 minutes to allow the flavors to meld.
  5. Serve the soup hot, dividing it among bowls and garnishing with any desired toppings such as salsa, avocado or cilantro.
