Chicken Fried Steak

Ingredients
For the steak
- 8 cube steaks
- 2 cups all-purpose flour
- 3 tablespoons seasoning salt
- 2 ½ teaspoons baking powder
- 1 ¼ cups whole milk
- 4 eggs
- 3 tablespoons Worcestershire sauce

- ⅓ cup all-purpose flour

Instructions
For the steaks
- Pound the cube steaks to an even thickness and pat them dry with paper towels.
- In a large shallow bowl, whisk together the flour, seasoning salt, and baking powder. In a second shallow bowl, whisk the milk, eggs, and Worcestershire sauce until combined.
- Coat each steak by dredging in the flour mixture, dipping in the egg mixture, then dredging again in the flour mixture. For the crispiest result, repeat the egg and flour dip to achieve a triple coating.
- Pour about ¼ inch of oil into a large Dutch oven or skillet and heat to around 350–375°F (175–190°C). Fry one or two steaks at a time for 1–2 minutes per side, or until deep golden brown. Drain on paper towels.
For the gravy
- In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1–2 minutes to remove the raw flour taste.
- Gradually whisk in the milk and cook, stirring constantly, until the gravy thickens. Season with salt and pepper to taste.
