Instructions
- Preheat the oven to 400°F (200°C).
- Line a 12-cup muffin pan with paper liners or generously grease the cups.
- Place all ingredients except the chocolate chips into a blender or food processor. Blend on high until the batter is completely smooth and well combined, about 2–3 minutes.
- Stir the chocolate chips into the batter by hand, reserving a few to sprinkle on top if desired.
- Divide the batter evenly among the prepared muffin cups, filling each about three-quarters full.
- Optionally sprinkle extra chocolate chips on top of each muffin for a pretty finish.
- Bake for 15–20 minutes, or until the muffin tops are set and a toothpick inserted into the center comes out clean.
- Let the muffins cool in the pan for about 10 minutes before removing to a wire rack to cool completely.
