I’m excited to share this recipe and a few recent updates from my life. Tonight I’m hosting a DIY Charcuterie Workshop for about 20 people. In the past I’ve done several cooking demonstrations, but teaching others how to build beautiful boards and encouraging them to step outside their creative comfort zone always feels special.

Outside of the workshop, I’m deep into nesting mode—reorganizing the house and prepping for a new phase of life. I’ve made progress, but I’m trying to keep the momentum going while I still have the energy. We’ve planned a babymoon in Maine to give ourselves a gentle transition before things get busier. Traveling and slowing down for a few days should help me reset and enjoy the next chapter.

Bacon Cheeseburger Stuffed Mushrooms

With the Fourth of July coming up, these Bacon Cheeseburger Stuffed Mushrooms are a great way to change up traditional patriotic fare. They’re quick to assemble: a seasoned cheeseburger mixture is packed into mushroom caps, baked until juicy, and topped with melty cheese and classic burger fixings. The result is all the flavor of a mini cheeseburger without the bun—and bite-sized snacks are always more fun at gatherings.

Yield: Makes 16 mushrooms

Prep Time: 10 minutes

Cook Time: 20 minutes

Ingredients:

  • 1 lb ground beef
  • 1 tbsp Worcestershire sauce
  • 1 tsp Tabasco (or your preferred hot sauce)
  • 1 tbsp yellow mustard
  • 2 garlic cloves, minced
  • Salt and pepper to taste
  • 16 baby bella mushrooms, stems removed
  • 1 tbsp olive oil
  • 6 slices cheddar cheese, quartered
  • 6 pieces cooked bacon, cut into squares
  • Grape tomatoes, halved
  • Sliced pickles

Directions:

  1. Preheat your oven to 350°F (175°C). Lightly grease a baking sheet with non-stick spray or oil.
  2. In a large bowl, combine ground beef, Worcestershire sauce, Tabasco, yellow mustard, minced garlic, and salt and pepper. Mix gently until just combined—overworking the meat can make it dense.
  3. Form the beef mixture into small patties or rounds that will fit into the mushroom caps.
  4. Arrange the mushroom caps on the prepared baking sheet and drizzle their tops with olive oil. Place the mini burger patties into each mushroom well. Bake for about 20 minutes, until the beef is cooked through and the mushrooms are tender.
  5. Remove the baking sheet from the oven and top each stuffed mushroom with a quarter of cheddar slice. Return to the oven for 5–10 minutes, or until the cheese has melted and is bubbly.
  6. Finish each mushroom with a piece of cooked bacon, a half grape tomato, and a small slice of pickle. Serve warm and enjoy.

Tips and Variations:

  • To save time, brown the ground beef in a skillet first, then drain excess fat before mixing with seasonings—this reduces baking time when assembling for large crowds.
  • Swap out cheddar for pepper jack or smoked gouda for a different flavor profile.
  • For a turkey or plant-based option, use ground turkey or a plant-based ground substitute seasoned the same way.
  • These stuffed mushrooms are best served fresh and warm, but you can refrigerate leftovers in an airtight container for up to 2 days and reheat gently in the oven.
  • If you prefer a crisper mushroom cap, roast the caps for 8–10 minutes before stuffing to draw out extra moisture.
