  • 4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 3 eggs, separated (you will use the yolks in the dough)
  • 2–3 teaspoons sour cream
  • 3 egg whites (for the walnut filling)
  • 1/2 cup granulated sugar (for the filling)
  • 1 cup finely ground walnuts or hazelnuts
  • 6 tablespoons apricot jam
  • 100 g dark (bitter) chocolate
  • 1/4 cup butter (for the topping)
  • 2 teaspoons granulated sugar (for the topping)
  • 2 teaspoons brandy or rum (optional, for the topping)
  • 1/2 egg white (for shine in the topping)

How to Make Gerbeaud (Djerbo) Cake

  1. Activate the yeast: Dissolve the fresh yeast in the lukewarm milk with a pinch (about 1 teaspoon) of sugar. Let it sit, covered, until it doubles in volume and becomes foamy, about 5–10 minutes.
  2. Prepare the dough base: In a food processor or large bowl, combine the remaining sugar, cold butter cut into pieces, flour and baking powder. Pulse or rub with your fingertips until the mixture resembles coarse crumbs.
  3. Mix the wet ingredients: In a small bowl whisk together the egg yolks, vanilla extract and sour cream. Add the foamy yeast mixture. Pour these liquids into the flour-and-butter mixture and mix until a smooth dough forms. If the dough feels too dry, add a little extra sour cream (up to the amount indicated).
  4. Chill (optional): At this point you may refrigerate the dough for at least an hour or overnight. Chilling makes it easier to roll and improves texture, but a short rest of 30–60 minutes will also work.
  5. Divide the dough: When ready, divide the dough into three equal portions. Preheat the oven to 375°F (190°C). Line a 30 x 20 cm (12 x 8 in) rectangular baking pan with parchment and lightly butter it.
  6. Make the walnut filling: Beat the three egg whites until soft peaks form. Gradually add the 1/2 cup sugar and continue beating until the whites hold stiff, glossy peaks. Gently fold in the finely ground walnuts using a spatula or hand whisk, keeping as much air in the mixture as possible.

  9. Prepare the chocolate topping: Place the dark chocolate, 2 teaspoons sugar and brandy (if using) in a heatproof bowl. Gently melt either over a bain-marie or in short bursts in the microwave, stirring frequently until smooth. Remove from heat, add the 1/4 cup butter and stir until melted and glossy. Add the half egg white and mix briefly to create a shiny finish—ensure the mixture is not too hot when adding egg white.
  10. Finish the cake: Spread the chocolate topping evenly over the cooled cake. Allow the topping to set at room temperature or briefly chill until firm.
  11. Serve and store: Cut the cake into small squares and, if desired, place each piece in a paper cup for presentation. This cake keeps well for several days when stored in an airtight container, allowing flavors to develop.
