We often call this a “kitchen sink” recipe because you can clear out the fridge and use up small amounts of ingredients by whisking them into eggs and baking them in a muffin tin. The egg muffins rise and set nicely in the oven, and each muffin is a convenient individual portion. We like adding extra cheese—feta, goat, gouda, Swiss, or cheddar all work—then finishing with toppings like salsa, avocado, guacamole, or chopped jalapeños to take them over the top.
