After a year of marriage—and seven years together—my husband and I find ourselves traveling more than ever, so our first wedding anniversary is a quiet, simple celebration. We don’t have grand plans today; instead we’ve spent the morning reminiscing about our wedding and the small, memorable moments that made that day special. It’s been a gentle, happy way to mark the day: a warm cup of coffee, soft music, and a comforting breakfast shared at home.
If you haven’t tried a strata before, you’re in for a treat. This Berry Strata is essentially a hybrid of French toast and a custardy quiche—comforting, slightly sweet, and bright with citrus notes. Cubes of day-old bread soak up a custard made from eggs, ricotta, milk, orange juice, melted butter and honey. Mixed berries add bursts of flavor and color. After an extended soak in the refrigerator the dish bakes until puffed and golden. The aroma while it bakes is irresistible, and the texture is tender with a little crunch at the edges.
There are many ways to make strata—both sweet and savory—but this version highlights seasonal berries and a hint of orange for freshness. It works beautifully for brunch or a leisurely weekend breakfast, and it’s simple enough to prepare the night before. Serve it warm, spooned onto plates, and, if you like, add a light dusting of powdered sugar or a drizzle of extra honey. This is the kind of dish that feels like a hug on a plate: comforting, satisfying, and easy to share.
Berry Strata

Servings: 4
Ingredients
- 2 tablespoons butter
- 3 tablespoons honey
- 4 large eggs
- 1/2 cup ricotta
- 3 tablespoons sugar
- 1 cup milk
- 1/4 cup orange juice
- 4 slices of bread, torn into 1-inch pieces (about 4 cups) — day-old baguette or country bread works well
- 1 (10-ounce) bag frozen mixed berries, thawed and drained (or about 2 cups fresh berries when in season)
Instructions
- Melt the butter in a small bowl, either in the microwave for a few seconds or gently on the stovetop. Stir in the honey until well combined and set aside.
- In a large mixing bowl, whisk together the eggs, ricotta and sugar until smooth and slightly frothy. Add the milk and orange juice and whisk until blended.
- Pour in the warm butter-and-honey mixture, then add the torn bread pieces. Stir gently so the bread soaks in the custard. Fold in the drained berries carefully to avoid breaking them too much.
- Transfer the mixture to a 10-inch round or a 2-quart baking dish, spreading it evenly. Cover with plastic wrap or a lid and refrigerate for at least 2 hours or up to 12 hours—this long soak helps the bread absorb the custard and yields a creamier texture.
- When ready to bake, preheat the oven to 350°F (175°C). Remove the strata from the refrigerator and let it sit at room temperature for a few minutes while the oven heats. Bake until the top is golden and the center is set, about 35–45 minutes depending on your oven and the depth of the dish. A toothpick inserted into the center should come out mostly clean.
- Let the strata rest for about 5 minutes before slicing. Spoon portions onto plates and serve warm. For extra flair, drizzle a little additional honey over each serving or dust with powdered sugar.
- Enjoy a comforting, fruity breakfast or brunch that’s easy to prepare ahead and perfect for sharing.
Notes and Tips
This recipe is forgiving and adaptable: swap the berries for other fruit such as chopped peaches, apples or pears, or add a handful of chopped nuts for crunch. Use day-old bread for the best texture—the slightly stale bread soaks up the custard without becoming gummy. If using fresh berries, toss them lightly with a teaspoon of sugar to macerate before folding into the custard.
