How to Assemble the Perfect S’mores Cupcake
Once the cupcakes are completely cooled, assemble them simply and carefully for the best results.
Start by piping or spreading a layer of chocolate buttercream onto each cupcake and flattening it slightly so the marshmallow buttercream will sit nicely on top. Next, pipe a swirl or mound of marshmallow buttercream over the chocolate.




A final flourish of extra crushed graham cracker on top adds a delightful crunch and boosts the visual appeal—highly recommended.

- ½ cup (120mL) milk, room temperature
- ½ teaspoon vanilla extract
CHOCOLATE BUTTERCREAM
- ¼ cup (57g) unsalted butter, softened
- 1 cup (120g) powdered sugar
- 3 Tablespoons (18g) Dutch-processed cocoa powder
- ½ teaspoon vanilla extract
- 1–2 Tablespoons (15–30mL) milk or cream
- Pinch of salt
MARSHMALLOW BUTTERCREAM
- ¾ cup (171g) unsalted butter, softened
- 6 ounces (174g) marshmallow creme (about 1 cup)
- ¾ cup (90g) powdered sugar
Instructions
GRAHAM CRACKER CUPCAKES
- Preheat oven to 350°F (177°C). Line a cupcake pan with liners.
- In a medium bowl, combine graham cracker crumbs, whole wheat flour, baking powder, and salt.
- In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy (about 3 minutes).
- Add the eggs and beat until smooth. Scrape the bowl, then add milk and vanilla and mix to combine.
- With the mixer on low, gradually add the graham cracker mixture and beat until fully incorporated.
- Fill liners about ¾ full (an ice cream scoop works well). Bake 18–20 minutes or until edges begin to brown and a toothpick comes out clean. Cool completely on a wire rack before decorating.
CHOCOLATE BUTTERCREAM
- Beat butter on medium speed until smooth (about 1 minute).
- On low speed, add powdered sugar, cocoa, vanilla, milk or cream, and a pinch of salt. Increase speed to high and beat until fully combined, 1–2 minutes, until smooth and spreadable.
MARSHMALLOW BUTTERCREAM
- Cream the butter until light and fluffy. Add marshmallow creme and beat on high until smooth (about 2 minutes).
- With the mixer on low, add powdered sugar, then increase speed to medium and beat until combined. The buttercream may be loose; add additional powdered sugar 1 tablespoon at a time to reach piping consistency.
ASSEMBLE THE CUPCAKES
- Pipe or spread a layer of chocolate buttercream onto each cooled cupcake and flatten slightly.
- Pipe a swirl or mound of marshmallow buttercream on top. Sprinkle extra crushed graham cracker over the top for added crunch, if desired. Store covered at room temperature up to 3 days.
