How to Make Sweet Corn Fritters

Recipe Tips

  • If using a very large zucchini, halve it and scoop out the center seeds to reduce excess water. Too much moisture can make the fritters soft instead of crisp.
  • Leaving the skin on is fine and adds color and nutrients; remove it only if the zucchini is very large and the skin feels tough.

  • 2 large eggs
  • 2 cups shredded zucchini
  • ⅓ cup diced onion
  • 2 cups sweet corn
  • ¾ teaspoon garlic powder
  • ¼ teaspoon cayenne pepper
  • ½ teaspoon freshly ground black pepper
  • 1 cup all-purpose flour
  • 1 teaspoon kosher salt
  • ½ teaspoon baking powder
  • ⅓ cup grated Parmesan cheese
  • 1 recipe chipotle mayo, to serve

Instructions
