This will take around 10–15 minutes, depending on pan size and heat level. Watch carefully to prevent scorching. Let the reduction cool before mixing with dairy to avoid curdling.

You can make the reduction ahead of time and store it in the refrigerator for up to two weeks.

How to make an Apple Cider Cake

This cake is straightforward and doesn’t require an electric mixer. You’ll need basic tools: mixing bowls, a whisk, a flexible spatula, and either an 8×8 or 9×9 square baking pan lined with parchment paper.

  1. Reduce 400 grams of apple cider to 200 grams. Reserve 140 grams of the reduced cider for the batter and set aside the remaining 60 grams for brushing and glaze. Allow the 140 grams to cool, then stir in 125 grams of room-temperature Greek yogurt; set aside.
  2. Preheat the oven to 350°F (180°C) and position the rack in the center. Lightly grease and line an 8×8 or 9×9 pan with parchment, leaving an overhang for easy removal.
  3. Whisk together the dry ingredients: 200 grams gluten-free all-purpose flour, 20 grams cornstarch, 1¼ teaspoons baking powder, ½ teaspoon baking soda, 1 teaspoon apple pie spice, and ½ teaspoon kosher salt.
  4. In a microwave-safe bowl or small saucepan, melt 60 grams unsalted butter and combine with 60 grams neutral oil. Let cool briefly.
  5. In a large bowl, whisk 140 grams light brown sugar with 2 room-temperature large eggs and 1 teaspoon vanilla until smooth. While whisking, slowly stream in the butter–oil mixture until evenly combined.
  6. Fold the dry ingredients into the wet mixture until mostly smooth, then fold in the apple cider–Greek yogurt mixture. The batter will be fairly thick; avoid overmixing for the best texture.
  7. Spread the batter evenly in the prepared pan and smooth the top with the back of a spoon or an offset spatula.
  8. Bake at 350°F for 40–45 minutes, or until the top is golden and a toothpick inserted into the center comes out clean. If you use a different pan size, adjust baking time as needed.
  9. Remove the cake from the oven and transfer to a wire rack. While still warm, brush the top with some of the reserved apple cider reduction to enhance flavor and moisture.
  10. Let the cake cool in the pan for 20–30 minutes. Meanwhile, mix together 50 grams granulated sugar with 1 teaspoon apple pie spice (or cinnamon). For the glaze, combine the remaining 35–60 grams of cider reduction with 30 grams melted unsalted butter.
  11. Brush the cooled cake with the cider–butter glaze and generously sprinkle the spiced sugar over the top. You can also dust the sides if you like a fully sugared finish.

Serving Ideas & Variations
