This chocolate ganache cake is intensely chocolatey, rich, and satisfying. The ganache sets to a soft, fudgy texture as it cools, so I pair it with a slightly structured, moist chocolate cake that can support the weight and density of the filling and frosting.
The recipe uses a simple 1:1 chocolate-to-cream ganache for the filling, the whipped frosting, and the drip. That single base keeps the process straightforward while producing a luxurious finish.

Chocolate notes

Step-by-step overview
Although the cake looks elegant, the process is simple. There are three baked cake layers, and the ganache is used three ways: cooled and thick for the filling, whipped into a frosting, and warmed slightly for the drip. Temperature controls how the ganache behaves, so plan the timing accordingly.
Using a precise scale makes a big difference for consistent results, especially with flour, cocoa powder, and the ganache ratio.
Chocolate cake layers
- Prepare the batter. Cream the butter and sugar for 1–2 minutes. Add the oil and beat on high until pale and fluffy.
- Add the eggs one at a time. Make sure each egg is fully incorporated. Add vanilla and sour cream and mix just until combined.
- Combine wet and dry ingredients. Add half the dry ingredients, stream in the milk while mixing on low, then add the remaining dry ingredients. Scrape the bowl to ensure even mixing.
- Divide the batter evenly. You should have roughly equal amounts for three 8‑inch pans—about 500 grams total batter split across the pans.

- Split for different uses. Reserve about half of the finished ganache for the cake filling (thicker), and place the other half in a mixer bowl to be whipped into frosting.
- Whip for frosting. Use a whisk attachment and beat the reserved portion at high speed for 3–5 minutes, until it lightens in color and becomes spreadable like frosting.


Assemble
- Pipe a ganache border. Place the first cake layer on your turntable or flat surface. Pipe a border of whipped ganache around the edge to create a dam.
- Fill the center. Spoon or pipe the un-whipped, thick ganache into the center, then level it.
- Repeat for remaining layers. Add the second layer and repeat the border-and-fill step, then top with the third layer.
- Frost the outside. Use the remaining whipped ganache to lightly frost the cake. Chill the cake so the ganache firms before adding the drip.
- Prepare the drip. Make a small batch of ganache (same method but smaller quantities), allow it to cool slightly until it thickens but remains fluid—about 15–30 minutes.
- Apply the drip. Pour the cooled ganache over the chilled cake and spread to the edges so it naturally drips down the sides. Work quickly but deliberately so the drips set nicely.

How to get a perfect chocolate drip
Drips are controlled by temperature and timing. Chill the cake first so the ganache sets as it drips, and adjust ganache warmth to control drip length.
- Make the ganache fluid but not hot.
- Chill the cake so the ganache sets quickly and creates clean drips.
- For a natural waterfall drip, pour ganache on top and spread toward the edge with an offset spatula or spoon.
- For uniform drips, let the ganache cool a bit more so it’s thicker, then pipe drips with a small tip before covering the top.


Make-ahead and storing
Make the cake layers ahead: Bake layers, cool for about 30 minutes, then wrap each layer in plastic wrap and place in a freezer bag with excess air removed. Thaw to room temperature before frosting; frosting frozen layers makes the whipped ganache set too quickly and become difficult to work with.
Make the ganache ahead: Prepare ganache, cool, store airtight in the refrigerator for a few days, and bring to room temperature before using. For best texture and flavor, many bakers prefer making ganache the night before and letting it cool overnight at room temperature.

Storing the finished cake
Store the finished cake under a cake dome or in an airtight container at room temperature for 1–2 days.
To refrigerate: Cover and store for up to a week. For best texture, consider freezing instead of extended refrigeration.

Method
Chocolate cake
