Mini Chai Latte Cupcake Recipe Notes

The chai flavor in these cupcakes comes from powdered chai tea latte mix. The recipe uses about 4 to 5 ounces of powdered chai mix (roughly four standard 1.1 oz packets). Any similar powdered chai blend should work—taste and adjust if the mix is more or less concentrated.

Use a non-stick mini-muffin pan and lightly spray it with baking spray before adding paper liners. As these mini cupcakes bake, the tops puff up and can stick to the pan if it isn’t greased. A light spray helps them release cleanly and preserves those cute domes.

This recipe yields approximately 54–60 mini cupcakes. If you don’t need that many at once, the unfrosted mini cupcakes freeze very well for up to two months. Freeze them in a single layer so they don’t stick together, then transfer to a container or bag for storage. Thaw before frosting.

Mini Chai Latte Cupcakes

Small, festive cupcakes flavored with chai and vanilla, topped with white chocolate & chai Italian Meringue Buttercream. Perfect for holidays, gatherings, or when you want a little sweet treat without excess.

Ingredients

  • 1½ cups (180 g) all-purpose flour
  • 1 tablespoon (7 g) cornstarch
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • 1½ teaspoon table salt, or 2 teaspoons kosher salt
  • 4–5 ounces powdered chai tea latte drink mix (about four 1.1 oz packets)
  • 4 tablespoons (57 g) unsalted butter, melted and cooled
  • 2 tablespoons (12.5 g) vegetable oil
  • 1 cup (200 g) granulated sugar
  • 2 large eggs, lightly beaten and at room temperature
  • 1 cup buttermilk, at room temperature
  • 2 teaspoons pure vanilla extract
  • 1 batch Italian Meringue Buttercream, flavored for Chai Latte and white chocolate
  • Optional: white chocolate chips and a light dusting of nutmeg for garnish

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly spray a mini-muffin pan with non-stick baking spray and line with paper liners.
  2. Whisk together the flour, cornstarch, baking powder, baking soda, salt, and powdered chai mix in a bowl until evenly combined.
  3. In a separate bowl, combine the melted butter, oil, and sugar. Whisk in the eggs until blended.
  4. Mix the buttermilk and vanilla in a measuring cup. Add the wet and dry ingredients to the butter mixture in alternating additions: flour, buttermilk, flour, buttermilk, flour. After each addition, whisk just until combined—do not overmix.
  5. Fill each muffin cup about ¾ full with batter. The batter should come nearly to the top of the paper liners. Bake for 13–15 minutes, or until a toothpick inserted into a cupcake comes out clean or with only moist crumbs.
  6. Allow the cupcakes to cool in the pan for about 1 minute, then turn them out onto a wire rack to cool completely before frosting.
  7. Pipe or spread the Chai Latte Italian Meringue Buttercream on each cupcake. If desired, top with one white chocolate chip and a light dusting of nutmeg.

Notes

  • No buttermilk? You can make a quick substitute by adding 1 tablespoon of lemon juice or vinegar to 1 cup of milk and letting it sit for 5–10 minutes.
  • Even with a non-stick pan, a light spray before adding liners helps prevent sticking and keeps the cupcake domes intact.
  • If you end up with more cupcakes than you need, freeze unfrosted mini cupcakes in a single layer for up to two months. Thaw before frosting.
