Easy Cinnamon Swirl Loaf — a moist, tender loaf cake with a ribbon of cinnamon sugar running through it. This quick, no-yeast bread is delightful with morning coffee or an afternoon cup of tea. It’s soft, easy to make and produces a wonderful bakery-like aroma as it bakes. The recipe yields one standard loaf and is ideal for slicing and sharing, or freezing in portions for later.

This cinnamon swirl loaf is one of those simple, satisfying bakes that works well for busy mornings and makes a lovely homemade gift. The batter comes together quickly without the need for yeast or rising time, and the cinnamon-sugar swirl adds texture and flavor without fuss. A light glaze finishes it perfectly, adding just enough sweetness and shine.
Can I freeze this cinnamon swirl loaf?
Yes. The loaf freezes very well. For convenience, slice the cooled loaf and freeze individual slices on a baking tray before transferring them to an airtight container or freezer bag. This allows you to defrost only what you need. Wrapped tightly in parchment and a freezer-safe bag, slices will keep well and retain moisture when thawed.
If you prefer to freeze the whole loaf, wrap it in parchment, then in cling film or foil, and place it in a freezer bag. Defrost overnight in the refrigerator or at room temperature for a few hours before serving.

Prep Time
10 minutes
Cook Time
45–50 minutes
Yield
1 loaf (standard 9-inch loaf pan)
INGREDIENTS
2 cups all-purpose flour
1 ½ cups granulated sugar, divided
1 tsp baking powder
½ tsp salt
1 ¼ cups buttermilk
1 tsp vanilla extract
1 large egg
¼ cup canola oil (or other neutral oil)
1 Tbsp ground cinnamon
The Glaze
¼ cup powdered (icing) sugar
2 tsp milk (adjust for desired consistency)
INSTRUCTIONS
- Preheat the oven to 350°F (180°C). Grease a 9-inch loaf pan well or line it with parchment for easy removal.
- In a large bowl, whisk together the flour, 1 cup of the granulated sugar and the baking powder and salt.
- In another bowl, combine the buttermilk, egg, vanilla and oil. Add the wet ingredients to the dry ingredients and stir just until combined — do not overmix. The batter should be smooth and slightly thick.
- In a small bowl, mix the cinnamon with the remaining ½ cup sugar to make the cinnamon-sugar swirl.
- Pour half of the batter into the prepared loaf pan and spread it evenly. Sprinkle half of the cinnamon-sugar mixture over the batter. Carefully spread the remaining batter over the cinnamon-sugar and finish by sprinkling the remaining cinnamon-sugar on top.
- Drag a skewer or knife through the batter a few times lengthwise to create a swirl pattern. This gives the loaf its cinnamon ribbon without mixing the layers completely.
- Bake for 45–50 minutes, or until a toothpick inserted near the center comes out clean or with a few moist crumbs. Oven times vary, so begin checking at 40 minutes.
- Allow the loaf to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
- To make the glaze, whisk the powdered sugar with milk until you reach a drizzling consistency. Drizzle over the cooled loaf and allow the glaze to set before slicing.

Storage & Tips
- Store the cooled loaf in an airtight container at room temperature for up to 3 days. For longer storage, keep it in the refrigerator for up to a week or freeze as described above.
- For a softer crumb, use whole-milk buttermilk or add a tablespoon of sour cream to the wet ingredients. If you don’t have buttermilk, make a substitute by stirring 1 tablespoon white vinegar or lemon juice into 1 ¼ cups milk and letting it sit for 5 minutes.
- Flavor variations: fold in a handful of chopped nuts, raisins, or chocolate chips to the batter for extra texture and flavor. You can also swap half the oil for melted butter for a richer taste.
- To check doneness without cutting into the loaf, use a thin skewer or cake tester; it should come out clean or with a few moist crumbs when done.
Allow the glaze to set before storing to prevent it from becoming sticky. This loaf makes a lovely homemade treat for breakfast, as a snack, or tucked into a lunch box.
