Classic Pork Stew Recipe: Tender Slow-Simmered Pork & Vegetables

When winter arrives I crave comforting, slow-cooked meals, and few dishes say comfort like a generous bowl of stew. This Classic Pork Stew is made in a dutch oven with cubed pork tenderloin, tender vegetables and a rich, gravy-like broth. It’s an ideal oven-baked dinner for chilly nights, and the leftovers are just as satisfying the next day.

I usually make beef stew, but pork tenderloin gives this version a delicate texture and excellent flavor. With potatoes, carrots, onions, celery and mushrooms, plus a hint of sweetness from ginger ale or apple juice, the finished stew is hearty and balanced — perfect for family dinners or casual entertaining.

How To Prepare The Pork

For this recipe I use two pork tenderloins. Trim any excess fat and remove the shiny membrane with a sharp knife. Cut the tenderloins into roughly 1-inch cubes; exact uniformity isn’t required, but similar-sized pieces will cook more evenly.

Heat 3 tablespoons of oil in a dutch oven over medium-high heat. Add the cubed pork and brown it on all sides, stirring occasionally so each piece gets a nice color. Browning builds flavor and improves the stew’s overall depth.

While the meat browns, dice the onion and mince the garlic. When the pork has a good sear, stir in the onion and garlic and cook together for about 5 minutes until the onion begins to soften.

Add The Vegetables and Liquids

When the onions are becoming tender, add the potatoes, carrots, celery and mushrooms. Pour in the can of diced tomatoes, the ginger ale (or apple juice), and the chicken broth. Season with salt, pepper and add bay leaves. Stir everything to combine, making sure ingredients are distributed evenly in the dutch oven.

Oven Cooking Time

Preheat the oven to 350°F. Cover the dutch oven and bake the stew for about 3 hours. The long, gentle heat will tenderize the pork and allow the vegetables to absorb flavor. You can check and stir the stew occasionally — the aroma while it cooks is wonderful.

How To Thicken The Broth

To create a gravy-like consistency, whisk 2 tablespoons of corn starch with 3 tablespoons of water in a small bowl to make a slurry. Stir the slurry into the stew; it should thicken quickly. If needed, return the covered pot to the oven for a few minutes, then stir and check consistency again.

Ingredients

  • 3 tbsp oil
  • 2 pork tenderloins, cut into 1-inch cubes
  • 2 medium onions, peeled and diced
  • 4 garlic cloves, minced
  • 5 medium red potatoes, cut into chunks
  • 5 medium carrots, peeled and cut into chunks
  • 3 celery stalks, diced
  • 8 mushrooms, quartered
  • 1 can (28 oz) diced tomatoes
  • 2 bay leaves
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 can ginger ale, or apple juice
  • 1 cup chicken broth (or water)
  • 2 tbsp corn starch
  • 3 tbsp water (to make slurry)

Instructions

  1. Preheat oven to 350°F.
  2. Heat the oil in a dutch oven over medium-high heat. Brown the pork cubes on all sides.
  3. Stir in the diced onions and minced garlic; cook for about 5 minutes until the onions soften.
  4. Add potatoes, carrots, mushrooms, celery, diced tomatoes, salt, pepper, bay leaves, ginger ale and broth. Stir to combine.
  5. Cover the dutch oven and bake in the oven for 3 hours.
  6. Remove the pot from the oven. Whisk corn starch with water to make a slurry, then stir it into the stew to thicken. If needed, return to the oven briefly to achieve desired consistency.
  7. Serve hot.
