Ingredients

  • 1 cup onions, chopped
  • 3 cloves garlic, smashed or minced

  • 1 teaspoon ground coriander

Directions

  1. Heat the canola oil in a large nonstick frying pan or wide skillet over medium heat. Add the chopped onion, smashed garlic, chopped celery and diced jalapeño. Sauté for about 3 minutes, stirring occasionally, until the onion becomes translucent and the aromatics are fragrant.
  2. Add the ground cumin, ground coriander and chili powder. Stir to coat the vegetables and toast the spices briefly—about 30 seconds—to release their flavor.
  3. Stir in the uncooked brown rice and continue cooking over medium heat, stirring occasionally, until the rice grains begin to turn golden and smell nutty. Toasting the rice adds depth to the finished dish.
  4. Mix in the grated carrot, then pour in the water and sprinkle the vegetable bouillon granules over the mixture. Add the bay leaf. Bring to a gentle boil, then reduce the heat to medium-low, cover, and simmer for approximately 20 minutes.
  5. After 20 minutes, stir in the drained beans, chopped tomatoes and the corn. Recover the pan and continue cooking on low heat for another 15 to 20 minutes, or until the rice is tender and the liquid is absorbed.   6. Remove the bay leaf and discard. Stir in the chopped cilantro (if using) and 1 tablespoon of the parsley. Taste and adjust seasoning if needed—add a pinch of salt or a squeeze of lime if desired.
  7. Transfer to a serving dish and garnish with the remaining tablespoon of fresh parsley. Serve warm.
