Classic Southern cornbread stuffing with smoked sausage that’s crisp on the outside, moist and flavorful inside—perfect for your Thanksgiving table.

I used to avoid stuffing—until I tried this smoked sausage and cornbread version. The combination of savory kielbasa, aromatic herbs, and properly stale cornbread creates a stuffing that’s far better than anything from a box. Once you make it at home, you’ll notice the difference in texture and flavor right away.
This recipe is straightforward and forgiving. It’s ideal for holiday meals because you can prepare components ahead of time, adjust seasoning to taste, and adapt quantities for larger or smaller gatherings. The result is a Southern-style side dish that balances a slightly sweet cornbread base with savory stock, vegetables, and smoked sausage.
Stuffing vs Dressing
What’s the difference between stuffing and dressing? Traditionally, “stuffing” refers to bread mixture cooked inside the turkey, while “dressing” is baked separately. Today the terms are often used interchangeably, but safety and convenience mean most home cooks bake their stuffing in a casserole dish rather than inside the bird.
Why Not Stuff The Turkey?
Cooking stuffing inside a turkey can introduce food-safety concerns. Juices from the bird can collect in the cavity, and to ensure the stuffing reaches a safe internal temperature you may have to overcook the turkey. Baking stuffing in a separate dish prevents this risk and produces a reliably crisp top and evenly cooked interior.
Ingredients

- Stale cornbread – store-bought or homemade; cut into cubes and allow to dry for several days for best texture.
- Smoked kielbasa or smoked sausage – about 12 oz, diced.
- Yellow onion – 1 large, diced.
- Garlic – 3 cloves, minced.
- Fresh herbs – sage leaves (minced) and rosemary (minced); fresh herbs provide the brightest flavor.
- Celery – 3 medium stalks, diced.
- Chicken stock – 2 to 3 cups, added gradually to reach the right moisture level.
- Butter – for sautéing the vegetables and sausage.
- Salt and pepper – to taste.
Tips
- Use really stale bread for the best structure. Cut cornbread into cubes and leave it uncovered at room temperature for several days or lightly dry it in a low oven.
- Add chicken stock a little at a time. The goal is moist, not soggy—stop when the bread holds together without collapsing.
- Brown the sausage well to build flavor. The fond left in the pan adds depth when mixed into the bread.
- If you want a crispier top, bake covered for most of the time, then uncover for the last 10–15 minutes.

FAQs
Is it sweet?
Cornbread often brings a hint of sweetness, especially if you use a sweeter recipe. That sweetness is balanced here by savory stock, aromatic vegetables, herbs, and smoked sausage, making the overall flavor predominantly savory.
Can it be made ahead of time?
Yes. One safe method is to prepare the dry and wet components separately, then combine and bake just before serving. Alternatively, you can fully bake the stuffing, cool it, and refrigerate it tightly covered; reheat before serving.
Can it be frozen?
Yes. Store the cooled stuffing in an airtight, freezer-safe container for up to a few months. Thaw in the refrigerator overnight before reheating.
How to reheat
Remove the stuffing from the refrigerator and let it sit at room temperature for 20–30 minutes so it reheats evenly. Preheat the oven to 350°F (175°C). Warm the stuffing covered for about 20 minutes, then uncover and bake another 10–15 minutes to crisp the top.
What to serve it with
This cornbread and sausage stuffing pairs well with roasted or Cajun-spiced turkey, glazed or mashed sweet potatoes, and sautéed or baked apples for a classic Southern holiday plate.
