I originally planned to make a proper small-batch pastry cream, but at the last minute I picked up an instant vanilla pudding mix. Using 1 1/2 cups of cold milk instead of the 2 cups the box suggests gives a thicker pudding that behaves more like pastry cream. For just four cupcakes, that little shortcut feels right — you still get the classic flavor without spending an hour on a tiny batch.
These cupcakes are ideal when you want a treat for two or a small household. The recipe yields four cupcakes, so there’s no temptation to overbake a full batch. They’re best served the day they’re made, when the filling is fresh and the frosting is soft and glossy.

Ingredients
- 4 tablespoons unsalted butter, softened
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 large egg white, at room temperature
- 2 tablespoons sour cream, at room temperature
- 6 tablespoons flour
- 1/2 teaspoon baking soda
- Pinch of fine salt
For the filling:
- 1 3.4-ounce box instant vanilla pudding mix
- 1 1/2 cups cold milk
For the frosting:
- 2 ounces unsweetened chocolate, chopped
- 4 tablespoons unsalted butter, softened
- 1 1/2 cups powdered sugar
- 1 tablespoon sour cream
- 1/4 cup cocoa powder
Instructions
- Preheat the oven to 400°F (204°C). Line four cups of a muffin pan with paper liners.
- In a medium bowl, beat the softened butter, granulated sugar, and vanilla extract with an electric mixer until light and fluffy, at least 30 seconds.
- Add the egg white and beat just until combined.
- Beat in the sour cream until incorporated.
- Sprinkle the flour, baking soda, and salt evenly over the batter, then beat until just combined. Do not overmix.
- Divide the batter between the four cupcake liners and bake on the middle rack for 16–19 minutes. The tops should spring back and a toothpick inserted into the center will come out clean.
- Remove cupcakes from the oven and let cool completely on a rack before filling.
- While the cupcakes cool, whisk the instant vanilla pudding mix into 1 1/2 cups cold milk. The box may call for 2 cups, but using 1 1/2 cups produces a thicker cream that mimics pastry cream. Chill briefly if necessary to thicken.
- Fill a pastry bag fitted with a large round tip with the thickened pudding. Insert the tip about 1/2″ into the side or top of each cupcake and gently squeeze a small amount of filling into the center. The cupcake surface will rise slightly as it fills. Repeat for each cupcake. You may have leftover filling.
- Make the frosting by placing the chopped unsweetened chocolate in a small heat-safe bowl. Microwave at 50% power in 30-second increments, stirring between sessions, until the chocolate is melted and smooth.
- In a medium bowl, combine the melted chocolate with the remaining frosting ingredients (butter, powdered sugar, sour cream, and cocoa powder). Beat on high with an electric mixer until the frosting is light and fluffy.
- Frost each cupcake with the chocolate frosting using a spatula or a piping bag. Serve immediately for the best texture. Store leftovers in the refrigerator and let them soften at room temperature about 15 minutes before serving.
